If you buy baby / spring greens in the plastic container, put a slice of paper towel in there after you open it. It absorbs the condensation and makes the greens last longer.

This also works if you're making a large salad for a picnic/pot luck. Make your salad (keep tomatoes separate), and layer it with a few sheets of paper towel. When you're ready to serve, remove the paper towel, add your tomatoes and dressing, and toss. Crisp greens, even hours later.
